Peach Breakfast Bake


Ingredients:

FYI… tsp=teaspoon & tbsp=tablespoon

2 cups rolled oats

1/2 cup flaxseed

1 tbsp Maca powder

1/4 tsp salt

1 1/4 tsp baking soda

1 tsp cinnamon

2 3/4 cups of peaches (a can and a half) (I buy them in water to save on the sugar)

1/2 cup unsweetened apple sauce

1 large egg

2 tbsp butter

1/4 cup light brown sugar

1 tsp vanilla

1/2 cup milk (I used 2%)

Directions:

•Preheat oven to 375 degrees

•Grease a 8×8 glass dish

•Combine dry ingredients all together: oats, flax, Maca, salt, baking soda, cinnamon

•Combine wet ingredients in another bowl: peaches, applesauce, egg, butter. Add brown sugar, vanilla and milk and mix well

•Combine wet ingredients into dry ingredients; pour into baking dish; bake for 45 minutes.

••Optional: add cinnamon on top; add walnuts or etc to mix; serve with yogurt; store in mason jars for easy transportation for breakfast at work!
